What’s For Dinner?
One of the dilemmas of life in an empty nest is figuring out what to fix for dinner. We are ten miles from the nearest grocery store, so we favor recipes based on ingredients with long shelf-lives. And it is handy to be able to make just enough for two, or more if needed. Here’s a recipe for Spicy Fish Pasta, using individually wrapped, frozen tilapia fillets, which come in a four-pound bag. The only fresh ingredient is zucchini.
Ingredients
Bowtie pasta, 1/2 cup dry pasta per serving. Tilapia fillets, one per serving. Zucchini, 1/2 cup per serving, quartered and sliced. Onion, 1-2 slices per serving, chopped. Butter, 1/2 tablespoon per serving. Garlic powder, lemon pepper or black pepper, dried basil leaves, salt. Flour, 1 tablespoon per serving, Velveeta or American Cheese, 1-2 slices per serving. Half & Half, or milk, 1/4 cup per serving. Diced Tomatoes with Green Chilis, 10 ounce can.
Directions
Chop vegetables. Thaw tilapia fillets in warm water and remove plastic. Start to cook bowtie pasta in boiling, salted water, with a splash of oil. Place butter and fish in a deep skillet with vegetables and season to taste with spices. Sauté on medium heat until fish is flaky and vegetables are slightly tender. Reduce heat. Stir in flour and add half & half, tomatoes, and cheese. Top with cooked pasta. Stir and heat until bubbly.
